Coconut Pecan Breakfast Bars (Grain, Gluten, & Dairy Free)

I've been entertaining the idea of Whole30. I eat gluten-free. I strive to be dairy-free. But I love some freakin' dessert and sweets. I found these and they're delightful. I will admit, I haven been eating them as a dessert instead of a breakfast bar. I feel like we could kind of modify these for the 21 Day Fix and go with a blue container and 1/2 red. :) Maybe an orange :)

Here's what you'll need:
- Coconut Oil (to grease your 8x8 pan)
- 2 eggs
- 1 banana
- 1/4 c honey
- vanilla
-1/3 c coconut flour
- 1 cup shredded coconut
- 4 tbsp coconut milk
- 1/2 c pecans

Nothin' to it, but to do it. Here's how:
- Preheat your oven to 350 degrees.
- I made mine in a stand mixer.
- Eggs go in first. Whisk them and then drop in the banana, honey, and vanilla.
- Add the coconut flour and mix it well. This flour is a little more clumpy than regular. Just mix it well.
- Add the coconut and coconut milk.
- Mix until everything is well combined.
- Pour into pan and spread out.
- Top with pecans
- Bake for ~25 minutes.

These are great right out of the oven, or they're good frozen and reheated. :)

21 Day Fix Waffles (Dairy and Gluten Free)

I've already made these 3 times since I took this picture. These are awesome for me. I love me some YELLOWS (21 Day Fix lingo), but my body sure does NOT. I found these waffles approved by Autumn that equal 1/2 red and 1/2 blue. Yep, that's it!!! I couldn't believe it either!


1/4 cup coconut flour
1/4 teaspoon baking soda
1 Tablespoon cinnamon
3/4 cup egg whites (or just egg)
1/2 cup almond/coconut milk
1 teaspoon vanilla

Optional toppings or additives (I like blueberries)

OH, and of course you'll need a waffle iron and some cooking spray. Don't be like me and forget to spray...


-In a mixing bowl, mix all ingredients with a hand mixer.

-Drop waffle batter into center of iron, fill about 3/4 of the area.

-Waffle is ready when it easily separates from the iron. About 3 minutes, but this depends on your individual waffle iron I'm sure.

Buffalo Ranch Chicken Stuffed Peppers (21 Day Fix Dinner Idea)

I tweak every recipe so that it fits ME and my needs :)

Tonight's stuffed pepper recipe calls for:

- One bell pepper (per person)
- Onion
- Chicken (1/2 large breast per person)
- Frank's Red Hot Sauce
- Dill, Garlic, Himalayan Salt, Pepper, Onion Powder

Here's how you make it:

- Preheat oven to 350.
- Bake or boil your chicken. This will need to be pulled apart when finished cooking.
- Mix in chopped onion, Frank's Red Hot, and seasonings with the chicken. The amounts are your personal preference.
- Cut off the top of a bell pepper. Take out all seeds, etc. from the inside.
- Pack chicken mixture into bell pepper.
- Place in oven for about 30-45 minutes.
- Take out when pepper skin gets wrinkly and slightly browned.

21 Day Fix Ice Cream

What a lovely way to get in your purples at the end of the day! This was so delicious. You'll need a banana (use 1/2 if your allotment is only 2 purple containers per day, but a whole if more than 2). This banana needs to be room temperature, or this won't work. Fill a purple container with FROZEN fruit of your choice (here I used a few strawberries and some blueberries).

Pour fruit into blender with 1 tsp honey. Blend until smooth.

THAT'S IT :) I'm in love! If you're feeling really adventurous, you can melt a tsp or two of coconut oil and stir in a tiny bit of Chocolate Shakeology. Pour it on top and it hardens like "Magic Shell!" Absolutely amazing!

Bacon-Wrapped Avocados (21 Day Fix Approved)

If there's a diet where I can have bacon-wrapped anything, just go on ahead and sign me up! What you see pictured is 4 slices of bacon and 1/2 of an avocado sliced up; this coincidentally equals one blue and one red on the 21 Day Fix.

Here's how you make them...

Preheat oven to 425 degrees.
Slice and pit avocado.
Cut lengthwise into four strips.
Wrap one slice bacon on each piece.
Mix 1 tsp chili powder with 2 tsp organic honey.
Drizzle chili-honey on top.
Bake for 15 minutes or until browned all around.

Shrimp & Grits

Ever since Sarah's rehearsal dinner, I have wanted to create my own shrimp and grits! I had never heard of shrimp and grits until I saw them at 6th Street Pier in Griffin a few years ago. So yum!

Here's What You'll Need:
- Grits (I used a yellow container worth on the 21 Day Fix, but I believe that's equivalent to something like 1/3 or 1/2 cup)
- Red peppers, and tomatoes if you'd like those too
- Sausage (I used 1/2 red container worth on the 21 Day Fix, but I believe that's the same size as the yellow)
- Shrimp (I bought salad shrimp, but you can buy any kind and use half of a red serving on the 21 Day Fix)
- Water (as directed on grits packaging)
- Himalayan pink salt, garlic, cayenne pepper for seasoning
- Cheese if desired (Obviously don't go this route if you're dairy free)

Here's What You'll Do:
- Using the amount of water specified on grits packaging, bring it to a boil.
- Pour in peppers, sausage, and shrimp and boil until hot all the way through.
- Season.
- KEEP THIS WATER IN THE POT :) It's flavorful and will replace the milk that you usually want to make grits with.
- Pour in the grits.
- Cook until done.
- Add cheese if desired. :)

P.S. I am a Beachbody Coach and have been doing the 21 Day Fix for over a year now and I thought grits were on the 21 Day Fix this whole time. I guess they're not. I don't see why not, though. Grit away :)

21 Day Fix Recipe: Sweet Potato Hash

I feel like everything I put on my blog just gets better and better tasting and becomes the best thing I've ever had. This is something I've been toying around with for awhile now. I am pretty interested in the Whole30 concept and they have a lot of sweet potato hash things in their recipes that I have found. This one is a variation of all of them put together :)
Sweet Potato Hash (Breakfast, Lunch, OR Dinner!)
diced sweet potatoes (If 21 Day Fixing, use your yellow container to portion)
turkey sausage (If 21 Day Fixing, use your red container to portion, but only fill half)
red pepper and onion (If 21 Day Fixing, use your green container to portion)
coconut oil (I used about 2 tsp in the pan for cooking in)
egg (1 fried egg will top this hash)
paprika, Himalayan pink salt (for seasoning)
