Cowboy Caviar Quinoa

Howdy! (That was lame.)

I made this quinoa dish because I am still just beginning my gluten free and dairy free journey and need something to use as an easy meal on week nights.


What you'll need:
- Cooked Quinoa (Plain)
- Chicken Breasts (1 small one per person or two)
- Can Black Beans
- 1/3 Avocado
- Frozen Corn
- 1 Egg (per person)
- Red Pepper
- Taco Seasoning (Make Your Own)
- Salt, Pepper, Onion Powder
- Olive or Coconut Oil

Directions:
- Cook chicken in skillet with oil
- Dump in remaining ingredients! It's that easy! 
- Cook an egg in a separate skillet (runny yolk) and top your bowl of quinoa.

Yum yum yum!!!
