Quinoa Chili (Vegan & Gluten-Free)

Oooooh wee. This was GOOD. I took this from another recipe I found and used what we had to make this and took some stuff out. Glad it worked out this way because this is delicious!


What you'll need:
Plain quinoa (serving size for however many people you are serving)
1 can of each:
Stewed Tomatoes with juice
Tomatoes with Green Chiles with juice
Black Beans with juice
Pinto Beans drained
Corn drained
1/4 clove of minced garlic
all to your liking:
Onion powder
Salt
Pepper
Cumin
Paprika
1 tbsp sugar

Cook the quinoa as directed and add remaining ingredients. Summer while you make a side dish. :) we topped ours with sour cream and cheese but that's not necessary. Could be vegan if you didn't add that. It is also GF. :)
