21 Day Fix Stuffed Peppers

I am always on the lookout for dinners WITH FLAVOR that I can eat while I'm on the 21 Day Fix. This one was definitely a hit! And as always, gluten free. We served this with a big salad and some applesauce. 


First, here's what you'll need:
- Peppers (I like red)
- Quinoa or brown rice
- 1 Can Black Beans
- Frozen Corn
- Salsa (We use homemade)
- Diced Onion
- Pepper Jack Cheese (6-8 oz)
- Seasonings (cumin, himalayan pink salt, etc. Would even be good with a Mrs. Dash Taco seasoning)

What to do:
- Cook the quinoa (I used a packet) as directed.
- Cut off tops of peppers and take out insides. Sit upward in crock pot.
- In a large mixing bowl, stir quinoa with all other ingredients.
- Scoop mixture into peppers. Pack firmly.
- Cook in the crock pot on HIGH for 3 hours or LOW for about 4-6. They just need to heat all the way through.

The Breakdown:
- 1 green
- 1 yellow
- 1 blue
- Could be 1 red if you wanted to add meat :)
